| The four seasons |
WinterThe leaves have fallen off the vines, the vineyards are bare. The must in the vats has stopped its bubbling. For the winemaker, now is the time to tear up vines that are past their best or affected by disease. It's also the season for ploughing and earthing up, to bring soil up to form a protective mound of earth ... SpringThe vines begin to "weep". The sap starts to rise and oozes out of the winter-pruned cane-ends. Shoots that have been cut are gathered up to be burnt. It's also the time for vine training, where the two canes are arched over and secured to the wires... SummerSummer is no holiday-time for the winemaker! He spends his time working the soil, pulling out weeds, trimming back and thinning the leaves. Again, the weather is of great importance and a good summer is one that is warm and dry, with "one hour of rain for ten hours of sun", and, above all, no hail!
Autumn
As the leaves gradually change colour, harvest time approaches, the moment everyone has been waiting for. The weather in September and October is of considerable importance now, and it's not rare for a vintage to be saved by a late burst of sun or damaged by the autumn rains.
